No.11 WHITE PEONY CUCUMBER CUP

A very crisp and refreshing drink with interesting complexity and green notes.

Add to a shaker or mixing glass with one cup of ice:

  • 45mL Laneway No.11 Gin

  • 30mL White Peony Tea Syrup

  • 2” English Cucumber, chopped

  • 2-3 Parsley or Cilantro Leaves

Pour entire contents, including ice, into a tall glass and top with sparkling or soda water. Stir gently

White Peony Tea Syrup

A versatile and complex lightly sweet syrup with good tannins and notes of hay, melon and barley.

Add to a heat proof vessel:

  • 25g White Peony Loose Tea

  • 400mL Water at 90˚C or 195˚F

Steep 15 minutes, then strain into a pot. Add:

  • 270g Cane Sugar

Boil on medium-high until sugar is dissolved, stirring occasionally. Store in an airtight glass jar in the fridge.

 Makes about 350mL – enough for about 10 cocktails.
