No.12 WHITE PEONY BOBA-TINI
This is a beautifully complex martini with green, floral notes and a just bit of sweetness.
Add to a shaker or mixing glass with ice:
45mL Laneway No.12 Vodka
30mL White Peony Tea Syrup
10mL Dry White Vermouth
10 drops Shiso Bitters (or other herbal bitter) – Optional
Shaker or stir to chill. Strain into a chilled martini glass or cocktail coupe and top with a tablespoon spoon of Lychee Pearls.

White Peony Tea Syrup
A versatile and complex lightly sweet syrup with good tannins and notes of hay, melon and barley.
Add to a heat proof vessel:
25g White Peony Loose Tea
400mL Water at 90˚C or 195˚F
Steep 15 minutes, then strain into a pot. Add:
270g Cane Sugar
Boil on medium-high until sugar is dissolved, stirring occasionally. Store in an airtight glass jar in the fridge.
Makes about 350mL – enough for about 10 cocktails.
