EVER WHITE PEONY HOT TODDY

A warm and comforting drink with beautiful forest and floral aromas.

Add to a tea mug or heat-proof glass:

  • 30mL Ever Gin

  • 30mL White Peony Tea Syrup

Top with hot water, stir gently. (Sip cautiously as beverage will be hot!)

White Peony Tea Syrup

A versatile and complex lightly sweet syrup with good tannins and notes of hay, melon and barley.

Add to a heat proof vessel:

  • 25g White Peony Loose Tea

  • 400mL Water at 90˚C or 195˚F

Steep 15 minutes, then strain into a pot. Add:

  • 270g Cane Sugar

Boil on medium-high until sugar is dissolved, stirring occasionally. Store in an airtight glass jar in the fridge.

 Makes about 350mL – enough for about 10 cocktails.
