WHITE PEONY TEA SYRUP

White Peony tea is a premium tea made from just the bud and first leaves of the tea plant – very popular in Fujian Province, China. It has a floral aroma and notes of fruit, melon, hay, and barley that bring complexity to cocktails.

We make a very strong tea and mix it with a sugar syrup to create a great cocktail ingredient that will last in your fridge for weeks.

Add to a heat proof vessel:

  • 25g White Peony Loose Tea

  • 400mL Water at 90˚C or 195˚F

Steep 15 minutes, then strain into a pot. Add:

  • 270g Cane Sugar

Boil on medium-high until sugar is dissolved, stirring occasionally. Store in an airtight glass jar in the fridge.

Makes about 350mL – enough for about 10 cocktails.


This versatile syrup is adds green notes of melon and hay, with and a hint of tannin to cocktails. The “tea” flavour is not overpowering, but it will add a layer of complexity and a some sweetness.
