No.12 Vodka Cherry Tomato Cocktail
While in the west we generally eat them in savoury dishes, this recipe really brings out the cocktail tomato’s fruity sweetness. Balanced with the late harvest funk of a Sherry and some savoury salt, the flavour combination is one of those intriguing ones that will keep you coming back for more.
Combine in a shaker or mixing container:
1 oz No.12 Vodka
½ oz Sherry
1mL Maldon Solution
1 barspoon Cherry Tomato Syrup* + 1 Cherry Tomato*
1/8 tsp Japanese plum vinegar
Muddle cherry tomato to release juice and seeds. Add ice and stir or shake to chill. Strain into a cocktail coupe.

Add to a small jar:
About 15 blanched and peeled cherry tomatoes
Equal weight of granulated sugar
Stir gently, then cover and allow to sit overnight at room temperature. The tomatoes will release their flavour and juice into the sugar, and you will be left with super sweet tomatoes and a thick syrup. Stir gently then store in a covered jar in the fridge.
