No.12 Peach Vodka Thyme
Nothing says hot, luscious summer like peaches! We created a mouthwatering mix of peach, fresh thyme, lemon and vodka that you can make ahead and freeze. The alcohol and sugar combine to make it freeze into a slushy, granita-like texture so it’s easy to scoop some out when guests show up. When ready to serve, just spoon over ice and top with tonic water, sparkling water, dry sparkling wine, or a crisp lager. Yum!
No.12 Frozen Peach Slush
Add to a medium saucepan:
• 125mL honey
• 125mL sugar
• 250mL water
Bring to a boil, then turn off heat and add 12 fresh thyme sprigs and 4 thin-sliced, ripe peaches (no need to peel). Let steep for about 20 minutes until cool, then strain into a large bowl, pressing to extract all of the delicious peach juice. Makes about 500mL.
Add in:
• 500mL Laneway No.12 Vodka
• 200mL fresh- squeezed lemon juice
Stir, then add to a freezer-safe container and store in the freezer. If you are using Ball 473mL freezer jars or similar, it works out perfectly to divide into three jars of 400mL each.
Peach Vodka Thyme Cocktail
Each ounce of slush has about half an ounce of vodka. We recommend adding about 2 oz of slush if topping with a 0% ABV beverage, or 1 oz if topping with wine or beer. If you’ve just made the syrup, measure it out as-is – it doesn’t need to be frozen to be enjoyed!
Just scoop/pour out the desired quantity into a glass, top with ice and tonic water. Garnish with citrus. peach slices, fresh thyme.
