It’s like fall in a glass! Our forest-scented Ever Gin pairs perfectly with tart cranberry and apple, and gets a cozy warm spice hug for those chilly nights.

The Cocktail

Add to a rocks glass over lots of ice:

• 1 oz Ever Gin
• 1 oz Fall Spice Mix
• 1 oz Canada Dry Gingerale

Stir gently, and garnish with a cocktail cherry.

Fall Spice Syrup

We made an extra large batch of this syrup, as we have used it in many of our fall cocktails. The Canadian is a great signature party cocktail that you can batch ahead of time, just adding the gingerale when you serve.

1.25L water
1.5L sugar
250mL apple cider vinegar
1- 8” cinnamon stick
2 star anise pods
1 tbsp (15mL) bourbon vanilla

Bring to a boil on high, stirring occasionally to dissolve sugar and prevent sticking. Turn heat to medium and leave on a slow boil for 20 minutes. Allow to cool, remove spices and store in a clean glass container in the fridge. Expect a strong vinegar smell as the mixture begins to boil, which will dissipate by the end of the 20 minutes. Makes about 1.5 – 1.7L

Fall Spice Mix

1.5L Fall Spice Syrup
1.5L unsweetened cranberry juice
Makes enough for about 125 cocktails

Any leftover Fall Spice Syrup can be mixed with equal parts cranberry juice to make more mix, or reserved for use in other cocktails. Try adding it to your next G&T to give it a cozy, winter twist.
