Ever Gin Apple Crisp

Laneway Ever Gin Apple Crisp cocktail

This cocktail will wrap around your tastebuds like a warm hug. It tastes just like the apple crumble my mom used to make, with fresh fruit flavours, autumn spice and buttery goodness mingling joyfully on the palate.

Combine in a cocktail shaker:

  • 1 oz Ever Gin Liqueur

  • 1 oz fresh-pressed apple cider

  • 2 tsp Browned-Butter-Infused Vodka*

  • ½ tsp dark maple syrup

  • ½ tsp dry white vermouth

  • 2-3 drops spice bitters (ie. Angostura)

Add ice, shake to chill and strain through a fine mesh strainer into a cocktail coupe.

Fat-washing is a technique used to extract flavours from fat-based ingredients. We brown the butter first to add some toasty goodness, then steep it in our No.12 Vodka to infuse the vodka with both the fat and water soluble flavour molecules – making for a very rounded, buttery flavour.

Brown ¼ cup of butter in a large frying pan (if you like nuts, you can throw in some chopped walnuts too, to add some bitter and nutty flavours to your cocktail). Let butter (and nuts if you’ve added them) cool slightly, then add to a glass mason jar filled with 250mL of vodka. Allow mixture to steep for two hours, occasionally swirling gently, then place in the freezer and allow to chill for at least an hour, or until the butter has turned solid. Remove from freezer and scoop out the solidified fats, then strain the remaining liquid through a fine filter (ie. a paper coffee filter or a nut milk bag) to remove any remaining sediment. Store in the fridge or freezer.⁠
