No. 12 Vodka
Persimmons have started showing up in the stores here, so we decided to feature some in this brunch cocktail. This sweet, smooth and spicy persimmon sour will definitely wake up your tastebuds.
The Cocktail (makes 2):
- 2 oz no.12 vodka
- 2 oz persimmon syrup*
- 2 oz fresh lemon juice
- 1 oz egg whites
- 1 oz maple water
- 4 dashes @angosturahouse bitters
Dry shake ingredients for 2-3 minutes until frothy, then shake with ice and strain into cocktail glasses. Garnish with a sprinkle of Espelette pepper for an extra hit of flavour.
- 4 small persimmons, tops removed and chopped
- 1 cup sugar
- 1 cup water
- 2 whole star anise
- Juice & zest of one lemon
Add persimmons, sugar, water, star anise and lemon juice to a saucepan and simmer for 20 minutes. Turn off heat, add lemon zest and leave for 15-20 minutes until cool. Store in fridge in a sealed glass jar – makes enough for about 8 cocktails.
