This is one of our favourite desserts – it’s incredibly delicious and requires no prep. The fresh forest aromas of the Ever Gin provide a great counterpoint to the rich, creaminess of a good vanilla ice cream. Try to pick an ice cream that doesn’t have any unnatural ingredients, such as Häagen-Dazs Vanilla Bean ice cream.
Combine in a cocktail shaker:
1 ½ oz Ever Gin Liqueur
1 small scoop of vanilla ice cream
Stir together with a spoon until the ice cream has melted into the Ever Gin. Add ice and shake to chill, then strain into a cocktail coupe. We’ve shown it garnished with a scoop of ice cream, but it’s best just served neat – the texture will be almost milkshake-like.
