Carrot Crisp

It’s #sundaybrunch day! This carrot cocktail is bursting with freshness and vitality and doesn’t care if you’re an early riser – the perfect companion for this morning.⁠⁠ Combine in a cocktail shaker with ice:⁠

  • 2 oz Laneway No.12 Vodka⁠
  • 6 oz carrot juice⁠
  • 4 oz pineapple juice⁠ (We juiced these fresh, but you can buy fresh or bottled.)⁠
    juice of 1 fresh lime⁠
  • 2 oz mint simple syrup*⁠
  • 10 dashes angostura bitters⁠
  • 2-3 dashes orange bitters⁠
  • 4-5 fresh basil leaves⁠

Shake until chilled, then strain into a small glass. We served ours with toasted baguette topped with butter, Maldon salt and fresh-ground pepper. ⁠ ⁠ ⁠

* Mint simple syrup: Add ½ cup water & ½ cup sugar to a sauce pan and heat to near boiling. Turn off heat, add a large bunch of fresh mint (stems removed), stir gently then leave mint to steep while the mixture cools. Strain syrup into an airtight jar and store in the fridge. Makes enough for about 10 cocktails.⁠
